Mezcal Eterno Anejo is produced using 100% Agave Espadin in the Martinez family ran distillery. Agave Espadin is the most common type of Agave for Mezcal production in Oaxaca. The Agaves are harvested between 8 to 10 years of age and cooked in an underground pit, crushed using a Tahona (stone wheel) and fermented in wooden vats. Like most Mezcales, Eterno is then double distilled in copper pot still which is where the master distiller will work their magic to give each batch its own character. Eterno Ańejo is aged in small, American white oak casks which mellow and soften this Mezcal, resulting in a distinct palette of oak wood and sweet herbal notes.
