Nuestra Soledad Mezcales showcases the unique terroir and distillation traditions of six different villages within the Valles Centrales (Central Valley) region of Oaxaca, Mexico. Each expression showcases the diversity of Mexico's most prevalent Agave varietal used for Mezcal production, Espadin.
This expression is produced in La Compañia Ejutla; a small town in the district of Ejutla, located in the south of the Valles Centrales (Central Valleys) region of Oaxaca. The Distiller (Palenque) sits at elevation of around five thousand feet, up-slope of the mountain. Given the slope-side location of the Agaves, sharp drainage allows them to feed from several, natural water sources that run down the mountain. The Agaves are roasted in pit ovens with mesquite and oak before Fermenting in open-air tanks and then double-distilled in copper alembic stills which results in a complex palette with subtle mineralty.
