This particular Mezcal from Alipus falls under ancestral classification as the
Agaves are hand crushed and it’s distilled in clay pots. This ensamble from Mezcal Alipus is one not to be missed, produced in Sola de Vega, Oaxaca, this Mezcal contains 80% Agave Espadin and 20% Agave Arroqueno. Not many would dare make such a bold combination of Agaves, specially with the Agave Arroqueno which is one of the most difficult Agaves to work with and also extremely rare however Master Distiller manages to bring out both the softness and creaminess of the Agave Espadin and the volatile and explosive notes of the Agave Arroqueno.
