Bozal
Bozal Ensamble Mezcal
Mezcal Bozal Ensemble is a blend of three different Maguey varietals, produced by three different Maestro Mezcaleros from two different towns in Oaxaca, Mexico. Wild grown Agave Mexicano and Barril are blended with cultivated Agave Espadin; resulting in a light and easy sipping mezcal which will take your palate on a journey through developing complexity and a lengthy finish. The Espadin brings balance of earth and floral notes to round out the powerful and complex notes of the Mexicano and Barril which bring forward citrus, spice and herbaceousness. If you're looking for an easy to drink Mezcal that still offers powerful undertones and a mid-weight palate then this one is for you!
Bozal is a family produced Mezcal. The families behind each production comes from a rich heritage of creating Mezcal; most are now in their 4th generation. Even within the Bautista family (main Maestro's producing for Bozal) the wife of Don Bautista (matriarch of the family and a lover of Mezcal herself) gets involved in the process, checking part of the fermentation and distillation. Mezcal is such an integral part of the lives of the Bozal Mezcaleros and families that even the son in law and cousins are involved in production; some family members were even able to return back to their home town to be involved after having to work in the U.S. Majority of the Maestro's and families speak Mixteco, an indigenous language of the region which is even rarer to come by than the Zapotec dialect. Therefore, they say Salud or Ko'o (drink) rather than Dixeebe.
"On the steep precarious hillsides of Oaxaca, Guerrero and Durango varieties of agave, indigenous to the region, grow wild and are heavily sought after by the local mezcaleros. These varietals produce flavours that are exotically intense, with rich earth tones and savoury smokiness. From the heart of the maguey these flavours are traditionally extracted to produce mezcal that is wildly refined. Because we at Bozal believe that something wild produces a far richer spirit."

FAQ
Questions and Answers
-
What does Agaveria means?
Agaveria is the place where to buy spirits made from Agave, such as
Tequila, Mezcal, Raicilla, Sotol and many more. It comes from the two
Spanish words Agave and Eria – from the Latin word that means store. -
What is the difference between Tequila, Mezcal, Sotol and Raicilla?
First, those spirits come from Mexico, and all have Appellation of Origin, better known as Denomination of Origin, meaning that nowhere else in the world can make these spirits and call them such.
The main difference between each one is the specie of Agave used (except for Sotol since it’s not made out of an Agave, but from a plant called Dasylirion or better known as Sotol) own plant and is not an agave) and the place/region/state that is made. There are differences in their process, and each spirit has a unique and distinctive
flavour and character. -
How do I store my spirit?
We recommend you do two things first, store them in a place away from sunlight and significant temperature changes, and second, seal your bottles with clingwrap or parafilm to preserve the alcohol.
