El Jolgorio has crafted this special batch Jabali Mezcal as part of their limited edition release of Artisanal Mezcales. The Special Edition releases of El Jolgorio showcase limited, small-batch production of Mezcal produced from extremely rare, 100% wild Agave varietals.
This Mezcal is produced from 100% wild-harvest, Agave Jabali which takes between 16 to 18 years to reach full maturity. Jabali is known to be difficult to work with, it takes an expert eye to know how to select the right Jabali Agave and expert knowledge on how to produce an exemplary batch of Jabali Mezcal. The Agave used to create this Mezcal has been cooked in underground earthen pits, crushed using a Tahona (stone wheel) to extract the juice from the Agave, fermented in pine wood vats and then twice distilled in copper pots. The water used throughout the production process is sourced from a natural well.
Through this Mezcal you can sense the spirit of the Maestro Mezcalearo (Master Distiller), his village and Palenque (Distillery). El Jolgorio Jabali is a Mezcal full of complexity and unique flavor that's made to be shared and celebrated with.

What does Agaveria means?
Agaveria is the place where to buy spirits made from Agave, such as
Tequila, Mezcal, Raicilla, Sotol and many more. It comes from the two
Spanish words Agave and Eria – from the Latin word that means store. -
What is the difference between Tequila, Mezcal, Sotol and Raicilla?
First, those spirits come from Mexico, and all have Appellation of Origin, better known as Denomination of Origin, meaning that nowhere else in the world can make these spirits and call them such.
The main difference between each one is the specie of Agave used (except for Sotol since it’s not made out of an Agave, but from a plant called Dasylirion or better known as Sotol) own plant and is not an agave) and the place/region/state that is made. There are differences in their process, and each spirit has a unique and distinctive
flavour and character. -
How do I store my spirit?
We recommend you do two things first, store them in a place away from sunlight and significant temperature changes, and second, seal your bottles with clingwrap or parafilm to preserve the alcohol.
